Beets are planted for year round harvest and are offered baby size, packed in generous one dozen or two dozen bunches; or large size in twenty five pound sacks. Each variety possesses a distinct earthy flavor, with the golden beet being the sweetest of them all. Enjoy beets, raw or cooked in salads, pickled, or even in a risotto. The beautiful hearty beet greens can also be braised or steamed.

Baby Bok Choy

Product Description
Baby “Shanghai” bok choy is a small, curvaceous, Chinese vegetable with tender leaves that fade from white into a jade-green. Baby bok choy is an excellent vegetable to pan steam, stir-fry or grill. Available year-round from Elegance Distributors, baby bok choy is packed in two dozen and ten pound cases.

Baby Carrots

Product Descriptions
Baby carrots in a kaleidoscope of colors are available year round from Elegance Distributors. Choose from seven unique varieties; pink, purple, French (orange), maroon, round (also known as globe or thumbelina), white and yellow. Excellent for elegant side entrée’s sautéed, steamed, or roasted. Baby carrots are generously packed in one dozen and two dozen bunches. Hand peeled baby carrots are also available throughout the year in five pound vacuum packed bags, offered in a single (French) variety, or a tri-color pack. Large colored carrots may be offered at certain times of the year in twenty five pound sacks.

Baby Cauliflower

Product Description
Golf ball size baby cauliflower offered in a rainbow of colors. Sweet and tender, these mini heads of cauliflower are a chef’s favorite for a unique side entrée, varieties include: purple, orange, green, white, and the Italian romanesco. Baby cauliflower may be steamed, roasted, or added to a gourmet vegetable kabob. Baby cauliflower may also be used to add interest to floral arrangements.

Celery Root

Product Description
Celery root, also known as celeriac is a lovely aromatic, bulbous root with a gnarled exterior. Trim off the earthen exterior and it reveals a pale ivory flesh, with a zesty celery fragrance. Culinary uses are endless; celeriac may be served raw in a shrimp cocktail or in a fancy relish tray, mashed with or without potatoes, roasted, soups, braised, or even fried. Elegance Distributors celery root is available September through June, with a short gap in the summer. Packs include: one dozen roots with or without tops or topless celery root in twenty five pound sacks.

Fennel

Product Description
Elegance Distributors baby and full size Fennel has feathery leaves that resemble fresh dill and an edible white bulb that resembles the bottom of a celery stalk. Fennel has an intense licorice aroma and taste and is used in numerous applications to infuse flavor and texture into meat dishes, stews, sausage, salads, stir-frys and much more. Parsley Root

Product Description
This fragrant root vegetable with feathery green tops has a wonderful nutty flavor with hints of carrot sweetness. Kohlrabi

Product Description
Have you ever eaten a kohlrabi? These little sputnik-shaped vegetables come in green or purple, can be eaten raw or cooked, and taste a lot like broccoli stems. The word kohlrabi is German for cabbage turnip (kohl as in cole-slaw, and rübe for turnip) though kohlrabi is more related to cabbage and cauliflower than to root vegetables. We usually eat them raw, just peeled, sliced and added to a salad, but they are also delicious cooked and are often used in Indian cuisine.
