Facts about Chanterelle
The shape of a Chanterelle
is somewhat like a trumpet, and its color varies. Fresh chanterelles are available
during fall and winter (from July though March). They are available dried year
round. The one advantage of using Chanterelle is that it can hold its own shape
when cooked unlike other mushrooms, which many chefs like. The taste of Chanterelles
is well prized by many great chefs and called the queen of the forest. It is integrated
wonderfully with cheese, tomatoes, fish, poultry and meat. |
