ferns are a good source of vitamins A and C and can be found throughout the eastern
half of the United States. They're usually available in our markets from April
through July (check our
weekly calendar), depending on the weather. The fiddleheads referred
to here is ostrich. Their tightly curled green shoots are picked before their
leaves unfurl, gathered from the wild rather than cultivated, which means they
are rare and expensive. But once you taste them, it is not something you will
easily forget. |
