Simple Recipe for Heart of palm

Heart of palm Salad

Ingredients:
2 (16 oz) hearts of palm or 1 lb of fresh
1/2 package of cherry tomatoes
1 large cucumbers
1/3 cup of diced green peppers
1 tsp of chopped fresh parsley,
1 tsp of chopped fresh lemon juice
1 tsp dijon mustard
2 tsp low sodium chicken broth
1 tsp lite olive oil
pepper to taste
lettuce leaves

Chop cherry tomatoes, cucumbers and heart of palm into half pieces.
Combine in a large bowl.
Mix in the green peppers, lettuce leaves & parsley.
In another bowl using a whisk, mix the lemon juice, mustard, broth, and olive oil, whisk until well blended.
Drizzle the dressing over the palm mixture, toss gently.
Season with pepper to taste.
Serve immediately.
